Hello from another Texan. I live in North East Texas. To get  a bird from seed onto pellets you gradually change the percentage of pellets to seed. Start with 75% seed and 25% pellets and stay that way for a week- then 50%, etc. It can be easier if you use a size or two smaller of pellets during conversion. In other words instead of cockatiel size start with finch or budgie size to begin.

That said- cockatiels are natural seed eaters and often have health problems associated with pellets. It may be better to just switch to a good seed- maybe even one that has seeds native to Australia.

Welcome to PerchTalk.  BirdMom gave you good advice.  When I had a Tiel I fed her seeds(a good mix, no sunflower) every day.  She had pellet at all times and a little fruit and veggies (though she didn't eat much of them).  Another thing to do if your Tiel won't touch the pellets is to put a little bit of fruit juice on them, somethimes this will entice the bird to try them.
